Grilled Bison Tenderloin (Unofficial Main Dish)

Game meat is extremely common in outdoorsy Montana, and bison, which requires minimal seasoning, is a clear favorite. Bison tenderloin is often grilled very simply and quickly, and served with potatoes as an evening meal. Many Montanans simply season the dish with store-bought seasoning mixes. Even using a custom mix of spices, this dish suits Montana's easygoing lifestyle. Bison is usually served with boiled or baked potatoes and string beans or another plain green vegetable.

Recipe Serves 2

Ingredients
  • ½ tsp (2.5 ml) garlic powder
  • ¼ tsp (1 ml) dried rosemary
  • ¼ tsp (1 ml) mustard powder
  • ¼ tsp (1 ml) black pepper
  • 2 bison tenderloins, about ½ lb (250 g) each
  • Juice from ½ lemon
  • 1 Tbsp (15 ml) olive oil
Instructions
  1. Preheat the grill to high.
  2. Whisk together the garlic powder, rosemary, mustard powder and black pepper in a small bowl.
  3. Rub the spice mixture all over the meat.
  4. Sprinkle the meat with lemon juice and oil.
  5. Place steaks on preheated grill and quickly sear each side.
  6. Reduce heat to medium and cook 8–10 minutes per side.
  7. Let rest 5–10 minutes before serving.
